An Adventure in Caribbean Cuisine
“…a splendid, robust, colourful paperback edition. One of the virtues of the book is the nutrition facts, produced by the Caribbean Food and Nutrition Institute…There’s a lot of chatty, fascinating information in the book too.”
Henry Fraser, Sunday Sun (Barbados)
An Adventure in Caribbean Cuisine presents traditional and original recipes from the widespread and diverse kitchens of the Caribbean’s Association of Home Economists. On show is the variety of ways in which the preparation and combination of the basic ingredients of traditional Caribbean “Creole” cuisine have developed throughout the territories. An Adventure in Caribbean Cuisine gives both background and culinary information; it serves as a recipe book and a guide through the romance of the traditional, and the excitement of the contemporary in Caribbean cuisine.
About the authors
The Caribbean Association of Home Economists (CAHE) was founded in 1972. This book was originated by the Research Committee of the CAHE, which set itelf the task of producing a booklet of experimental cooking from across the region. Over the years, interest grew and the result is now much more than a recipe book, giving an inticing glimpse of the foods and flavourings that contribute to the "romance" of Caribbean cuisine.
